Ground Cherry Salsa

This ground cherry salsa recipe is the perfect way to use the tons of ground cherries you’ll end up with after following my growing guide. This colorful fruit salsa has a little bit of everything — it’s tart, sweet, and savory. We like to eat it on chicken and pork, on homemade cinnamon chips, or on its own by the spoonful.  

Ingredients:

  • 2 cups of ground cherries, husked
  • 1 chopped apple
  • 3 stalks of celery, chopped
  • ½ red onion, diced
  • 3 plums, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Directions:

  1. Mix all of your prepared fruits and vegetables in a large bowl.
  2. Add the olive oil and apple cider vinegar and stir.
  3. Season to taste.
  4. Let rest in fridge for 4-6 hours.
  5. If it seems dry, add a little bit more olive oil and apple cider vinegar. 

This ground cherry salsa is best eaten on the same day, otherwise the plums can get a bit soft.

Serves : 4 to 6
